Yes we always test for mold. The inspection of mould is done by following the moisture content from every incoming green coffee batch. Regarding the moulds the most critical subject is ochratoxin A. Ochratoxin A (OTA) is a mycotoxin produced by mould that can develop on badly stored coffee beans. If the moisture content of green coffee exceeds >12,5% the risk of formation of ochratoxin A increases. If the moisture content is exceeded the green coffee batch is blocked and a separate ochratoxin A analysis is done. In the case the batch is not meeting the quality standards of Mode Cold Brew the batch is returned back to the supplier.
